Huevos al vinagre


Que las conversaciones intranscendentes tienen una dinámica extraña y varían de un tema a otro de un modo casi browniano no extraña a ninguno. En esas estábamos un compañero y yo durante una aburrida clase cuando me comentó cómo meter un huevo cocido dentro de una botella de cristal sin romper ni huevo ni botella.

"Eso no es nada extraordinario -dije yo (no) con estas palabras-. Yo metí una vez un huevo crudo dentro de una botella sin romper ni huevo ni botella."

Claro, mi escéptico amigo (que lee este blog y por tanto incito a que no me deje en evidencia si me equivoco ;D) no se lo creía, y yo le expliqué dónde estaba el truco: el vinagre.

Si no le faltan huevos (que mal juego de palabras) puede usted mismo hacer el experimento... tome un huevo de la nevera y métalo en un vaso. A continuación agarre de botella de vinagre y rocíe el huevo hasta cubrirlo. Notará que al cabo de muy poco tiempo el huevo está rodeado de unas burbujitas blancuzcas. Pues bien, esas burbujitas no son más que dióxido de carbono, fruto de la reacción entre el ácido acético del vinagre (el que le da ese olor y sabor) y el carbonato cálcico de la cáscara del huevo (es la misma reacción que hay entre el ácido clorhídrico y el mármol... o si no que le pregunten al David de Miguel Ángel).

Si lo dejamos sumergido en vinagre el tiempo suficiente (un día llega y sobra) el vinagre se "habrá comido" todo el carbonato cálcico, quedando el interior del huevo separado del exterior por una membrana flexible. Si ahora posamos el huevo sobre la boca de una botella un poco más pequeña éste, por su propio peso, se deformará para caer en el interior.

Yo, como soy muy buen científico (¡ja!), me propuse demostrarlo empíricamente, así que al día siguiente aparecí con una botella y un huevo avinagrado... sólo que escogí una botella con una boca muy pequeña y un huevo enorme que por encima aumentó al tenerlo en vinagre (la membrana es semipermeable... sirve muy bien para hacer pequeñas prácticas de osmosis), de modo que ni entró ni nada. Es más, me rompió en la mano cuando jugaba con la membrana apretándola, es deformable pero no tanto.
